ABSTRACT. The influence of harvest method on proximate composition, protein oxidation, and texture profile of beef from Nellore cattle were investigated. Longissimus lumborum (LL) muscles were obtained from twelve grain-fed Nellore carcasses. The animals were slaughtered after stunning (STU; n=6) or without stunning (WST; n=6) and after 24 hours postmortem, the LL was sliced into 2.54-cm steaks, packed under aerobic conditions, and stored at 4°C for nine days. Proximate composition was analyzed on day 0, whereas protein oxidation (carbonyl content) and texture profile (hardness, chewiness, cohesiveness, and springiness) were evaluated on days 0, 3, 6, and 9. STU and WST steaks exhibited similar proximate composition, hardness, and chewiness (p > 0.05). WST steaks exhibited greater protein oxidation and lower cohesiveness than their STU counterparts on day 0 (p < 0.05). Concerning the storage period, WST steaks demonstrated a decrease in springiness and a more pronounced increase in cohesiveness than their STU counterparts (p < 0.05). These results indicated that the harvest method influenced LL protein oxidation and texture profile from Bos indicus cattle.

O objetivo deste trabalho é detectar a sensibilidade de bactérias da família Enterobacteriaceae a diferentes antimicrobianos em frangos de corte submetidos à dieta com nitrofuranos. Para avaliar a sensibilidade foram isoladas e identificadas colônias da microbiota intestinal em frangos de corte. Os gêneros de maior frequência foram Escherichia e Klebsiella, seguidos de Enterobacter, Pseudomonas, Hafnia, Proteus, Morganella, além do gênero Citrobacter. Todos os isolados apresentaram resistência a dois ou mais antimicrobianos com diferentes perfis de resistência. Observou-se grande resistência aos nitrofuranos, especialmente a nitrofurantoína (100%), nitrofurazona (98,5%) e furaltadona (97,8%). Em relação às outras classes de antimicrobianos, a maior resistência foi a tetraciclina (92,5%) e a maior sensibilidade a amoxicilina/ácído clavulânico (48,1%). Não foi possível afirmar que a alta resistência aos nitrofuranos detectados nos isolados fecais foi devido ao uso destes antimicrobianos na ração. A resistência à tetraciclina e nitrofuranos reafirma a importância da não utilização destes fármacos em criações avícolas.

In this study, we aimed to detect the sensitivity of the Enterobacteriacea to different antimicrobials in broilers submitted to a nitrofurans diet. To evaluate this sensitivity, colonies of the broiler intestinal microbiota have been isolated and identified. The most frequent genera found have been Escherichia and Klebsiella, followed by Enterobacter, Pseudomonas, Hafnia, Proteus, Morganella and further Citrobacter. All isolates have presented resistance to two or more antimicrobials with different resistance level profiles. Resistance to nitrofurans, especially nitrofurantoin (100%), nitrofurazone (98.5%), and furaltadone (97.8%) has been observed. Concerning other antimicrobials classes, the higher resistance has been to tetracycline (92.5%) and the lower sensitivity, to amoxicillin/clavulanic acid (48.1%). It has not been possible to assert that the high resistance to the nitrofurans detected in the fecal isolates is due to the usage of these antimicrobials in the feed. The resistance to tetracycline and nitrofurans reaffirms the importance of not using of these drugs in poultry breeding

In the present study the effects on shelf life and sensory acceptance of gamma-irradiated refrigerated poultry breast fillets subjected to modified atmosphere packaging (80% CO2/20% N2 or vacuum) were investigated. After irradiation with 2 kGy, sensory acceptance tests and monitoring of bacterial growth were performed in order to determine the sanitary quality of the samples. It has been found that irradiation, used in combination with modified atmosphere packaging, can double the shelf life of refrigerated poultry breast fillets by reducing the populations of aerobic mesophilic and psychrotrophic bacteria, enterobacteria, coliforms, Listeria spp. and Aeromonas spp., without significantly modifying its color or its overall appearance, the lactic acid bacteria being the most resistant to exposure to radiation and carbon dioxide.

O objetivo do presente estudo foi avaliar os efeitos dos processos de irradiação (com dose de 1,5kGy) e embalagem em atmosfera modificada (60% N2 e 40% CO2), aplicados isoladamente ou combinados, na extensão da validade comercial de filés de Tilápia do Nilo (Oreochromis niloticus) resfriados. Nos experimentos, foram utilizados 120 filés separados em lotes, de acordo com o tratamento: (T1) embalagem em ar (controle), (T2) embalagem em atmosfera modificada, (T3) embalagem em ar e irradiação, (T4) embalagem em atmosfera modificada e irradiação. Foram realizadas análises físico-químicas (BVT, TMA, pH, amônia e TBARS), bacteriológicas (contagem de bactérias heterotróficas, aeróbias, mesófilas e psicrotróficas) e avaliação sensorial. Os resultados consistentemente indicaram uma redução progressiva da qualidade do produto com o tempo de armazenamento, a qual foi significativamente mais rápida nas amostras controle do que naquelas submetidas aos demais tratamentos, tendo sido observada uma extensão na validade comercial dos filés embalados em atmosfera modificada e/ou irradiados de 4 dias para aproximadamente duas semanas.

This paper investigated the effects of modified atmosphere packing (60% N2 and 40% CO2) and irradiation (with a 1.5kGy dose) either used alone or combined on the shelf life of fillets of refrigerated Nile Tilapia. A total of 120 fillets were used in the experiments in order to test four different treatments and included samples: packed in air (control), packed in modified atmosphere, packed in air and irradiated, and finally, packed in modified atmosphere and irradiated. Regular monitoring of physicochemical parameters (TVB, pH, ammonia and TBARS), bacteriological conditions (heterotrophic aerobic mesophilic and psychrotrophic bacteria) and sensory acceptance were performed. The results consistently indicated an increasing deterioration of the fillets with time, however those treated with irradiation, modified atmosphere or both combined had longer shelf lives (around two weeks) in comparison with the control (4 days only).

O teor de hidroximetilfurfural (HMF) é reconhecido internacionalmente pela capacidade de indicar o frescor do mel, podendo ser usado para avaliar o processamento e condições de armazenamento do mel. Neste trabalho objetivou-se avaliar a evolução dos níveis de HMF em mel recém-obtido, submetidas a diferentes temperaturas que variaram de 30 a 100º C, por intervalos de tempo pré-definidos (30, 45, 60, 180 e 720 minutos). O ensaio foi realizado em mel floral, cujo valor inicial de HMF foi de 2,2 mg/Kg. O valor máximo preconizado pela legislação brasileira não foi ultrapassado nas amostras submetidas ao aquecimento por 30, 45 e 60 minutos independente das temperaturas. Por um período de 180 minutos, o limite legal de 60 mg/Kg foi extrapolado nas amostras tratadas a 90º C. Os valores mais elevados foram observados nas amostras submetidas ao aquecimento por 720 minutos, tendo o limite legal ultrapassado em temperatura mais branda (70º C). Com base nos resultados obtidos, pôde-se concluir que o conteúdo de HMF aumenta gradativamente quando o mel é exposto a altas temperaturas, por tempo prolongado. Sendo assim, sugere-se uma otimização nos processos de beneficiamento, considerando a quantidade inicial de HMF no produto, com processamento padronizado em temperaturas e tempo controlados para garantia da qualidade do produto final.

Hydroxymethylfurfural (HMF) content is internationally recognized for its ability to indicate the freshness or lack of freshness of honey and can be used to judge the processing and storage condition of honey. The objective of the present study was to evaluate the evolution of HMF levels in fresh extracted honeys submitted to different temperatures ranging from 30 to 100º C, during pre-established time intervals (30, 45, 60, 180 and 720 minutes).The test was conducted in floral honey with an initial HMF content of 2.2 mg/Kg. The maximum value recommended by the Brazilian law (60 mg/Kg) was not exceeded in the samples subjected to heating for 30, 45 and 60 minutes regardless of the temperatures used. When the samples were heat treated during 180 minutes at 90º C the official value was surpassed. The highest values were observed in samples subjected to heating over 720 minutes, and the limit was exceeded at 70º C. The results obtained indicate that the HMF content gradually increases when the honey is heated at high temperatures for long periods. Therefore, we suggest a process optimization, considering the initial HMF content of the product and standardizing times and temperatures to ensure a good quality of the final product.

This work investigated the effects of different packaging methods (air and vacuum) combined with irradiation (0.0, 2.0 and 3.0 kGy) on the preservation of chicken breast fillets stored at 1ºC for up to 18 days by sensorial test, determination of pH and bacterial growth. The findings indicated that the post-irradiation lag phase increased with the dose, leading to an extension in shelf-life. Vacuum-packed samples irradiated at 3.0 kGy exhibited the longest shelf life. Among the analyzed bacteria, coliforms and Listeria spp. were most sensitive to gamma radiation. All the fillets acquired more attractive coloration and better overall impression with irradiation. The combined use of vacuum packaging and irradiation (3.0 kGy) reduced the microbial populations without causing change in pH and yielded a significant shelf-life extension of refrigerated fillets, besides improving its appearance.

A vida útil dos alimentos perecíveis conservados em atmosfera normal é limitada principalmente pelo efeito do oxigênio atmosférico e o crescimento de microorganismos aeróbios produtores de alterações, que promovem mudanças de odor, sabor, cor e textura, conduzindo à perda da qualidade. A modificação da atmosfera prolonga significativamente a vida útil dos alimentos, quando comparados à refrigeração, podendo chegar a um aumento de três a quatro vezes. O trabalho teve como objetivo avaliar o efeito da embalagem de sardinhas (Sardinella brasiliensis) em atmosfera modificada. As amostras foram divididas em 8 lotes, embaladas com aproximadamente 1,5 L de ar (100%), CO2 (100%), 50/50 CO2/O2 e vácuo e termo-seladas, sendo armazenadas por um período de 22 dias. A cada 2 dias as amostras foram avaliadas quanto ao pH, bases voláteis totais (BVT) e contagens totais de microrganismos heterotróficos aeróbios mesófilos. Os valores de pH aumentaram durante o tempo de estocagem, com exceção das amostras armazenadas em 100 e 50% CO2. A evolução de BVT foi compatível com outros parâmetros, como pH e contagem de bactérias totais, sendo sua evolução mais lenta nas amostras em que ocorreu o uso de atmosfera modificada. Os microrganismos mesófilos, nas atmosferas enriquecidas com CO2, apresentaram fases de latência e tempos de duplicação maiores, quando comparados com os das amostras em que não foi aplicado o método. Sob o ponto de vista microbiológico, as embalagens enriquecidas com CO2 demonstraram ser o melhor método de conservação, como também os resultados de BVT se encontraram dentro dos limites de 30 mg.100 g -1 de acordo com o estabelecido pela RIISPOA8. Recomenda-se o uso da atmosfera de 100% de CO2 como forma de conservação da sardinha por apresentar melhores parâmetros de vida útil.

The objective of the work was to evaluate the effect of sardines (Sardinella brasiliensis) packaged in a modified atmosphere. The samples were divided into 8 lots, filled with approximately 1.5 L of air (100%), CO2 (100%), 50/50 CO2/O2 and vaccum and term-sealed. During 22 days of storage, samples were taken and the pH was determined, the total volatile bases (BVT), and the total counts of heterophylic aerobic mesophylic microorganisms. The pH values increased during the time of storage, except for the samples stored in 100 and 50% CO2. The BVT evolution was compatible with other parameters, as pH and the total counts of heterophylic aerobic mesophylic, and its slower evolution in the samples where the modified atmosphere use occurred. The mesophilic microrganisms, in atmospheres enriched with CO2, presented phases of latency and bigger times of duplication in the samples where the method was not applied. Concerning microbiology, the packagings enriched with CO2 demonstrated to be the best conservation method, and the results of BVT were 30 mg.100 g -1 described as a limit RIISPOA8.

Com o objetivo de avaliar o efeito da embalagem de carne suína em atmosfera modificada, obteve-se assepticamente amostras de lombo (Longissimus dorsi) de suíno de aproximadamente 3x3cm que depois de lavadas em solução salina (0,35%) estéril, foram introduzidas em bolsas de plástico (Cryovac BB4L) de baixa permeabilidade. Dividiram-se em 4 lotes e se embalaram com aproximadamente 1,0l de ar (100%), nitrogênio (100%), 20/80 e 40/60 CO2/O2 e se termo-selaram. Finalmente, cada lote se subdividiu em 2, armazenando-se a 1 e 7ºC. Durante o armazenamento tomaram-se amostras determinando-se a composição da atmosfera, o pH e a composição da microbiota (microbiota total, bactérias lácticas, Enterobacteriaceae, Brochothrix thermosphacta e contagens em ágar pseudomonas). Os parâmetros de crescimento (fase de latência e tempo de duplicação) dos microrganismos foram determinados mediante a equação de Gompertz. Os resultados demonstraram que a vida útil da carne suína é prolongada quando se armazena em atmosferas modificadas. As atmosferas enriquecidas com CO2 e a 1ºC mostraram uma maior eficácia. As atmosferas com CO2, mantiveram o pH das amostras constante durante todo o período de armazenamento. A 1 e 7ºC, as fases de latência e os tempos de duplicação da microbiota total foram progressivamente maiores na seguinte ordem: atmosfera de ar (100%), N2 (100%), 20/80 e 40/60 CO2/O2. Pode-se concluir que, tanto a 1 como a 7ºC, a utilização das atmosferas modificadas retardou o crescimento das bactérias alterantes da carne suína, favorecendo o prolongamento da vida útil, principalmente nas atmosferas com CO2.

The objective of the present study was to evaluate the effect of modified atmospheres on refrigerated pork meat (Longissimus dorsi). Pork meat was cut into ca. 1cm thick slices of 9cm², introduced in Cryovac type BB4L bags, characterized by its low gas permeability, and divided into four batches. The bags of each batch were filled with either 1.0 L of air (100%), nitrogen (100%), 20/80 or 40/60 CO2/O2 and finally sealed. Samples were subdivided into two batches and stored in walk-in cold rooms at 1 and 7ºC. Samples were taken at different days of storage and pH and gas concentration (CO2/O2/N2) were determined. Likewise, total viable, lactic acid bacteria, Enterobacteriaceae, Brochothrix thermosphacta and Pseudomonas were counted. Bacterial growth parameters were assessed using Gompertz equations. As expected, modified atmosphere packaging extended the pork meat shelf life. However, modified atmospheres enriched with CO2 and at 1ºC showed a greater effectiveness. The samples conserved in MAP enriched in CO2, as much to 7 as to 1ºC, maintained the constant pH during the period of storage. At 1 and 7ºC the lag phases and the duplication times of the total microbiota were progressively larger in the following order: air (100%), N2 (100%), 20/80 and 40/60 CO2/O2. In accordance with the results, it can be concluded that, by as much to 1 as to 7ºC, the use of the modified atmospheres slowed the growth of the spoilage bacteria of pork meat, favoring the extension of the useful life, mainly in the MAP enriched with CO2.
